WINE PAIRING: Chicken soba noodle salad with Riesling

If you’re wondering what to drink with noodles you need to think about the way they’re cooked and what flavours they have.

Chicken Soba noodle salad, which we’ve chosen for today, consists of Japanese noodles made from buckwheat flour, poached ginger chicken and some fresh vegetables. It’s often served with Goma dressing, which is a mix of sesame seeds, Japanese mayonnaise, rice vinegar and soy sauce.

As the noodle salad offers a fairly subtle panoply of flavours, wines that are very assertive can too easily overpower it. It thus pairs best with white wines, particularly unoaked ones. Being delectably fresh, it also benefits from being matched with an equally fresh-tasting, bright wine.

Aromatic white wines, such as a dry Riesling or Grüner Veltliner, usually go very well with a bowl of noodles.

We would suggest to try Wittmann Riesling Trocken 2017 from Germany. This Riesling tastes lively and youthful, with delicate peach, quince and citrus flavours with hints of minerality. Very slightly off-dry, its subtly sweet notes enhance the ginger and other Asian elements in the dish.
