WINE PAIRING: a Meringue cake and Muscat wine

Today we will discover what to pair with the fancy dessert named after the Russian ballerina Anna Pavlova. Pavlova is a meringue-based cake with a crisp crust and soft, light inside, usually topped with fruit and whipped cream. It is an elegant dessert with delicate and fruity flavours.

Following the rule that sweet desserts should be paired with a wine that has at least as much sugar as the dessert, we suggest to choose Campbells Rutherglen Muscat from Victoria, Australia. This sweet, made of 100% “Muscat a petit grains rouge” grape, wine has fresh raisin aromas and rich fruit flavours, with oak character on the palate. The bright sweetness and pronounced fruitiness of the wine will perfectly complement fruit notes of the Pavlova dessert.
